Nestled amidst the picturesque mountain hamlet of Domaine La Bosque, where the shale crossings of the AOC Saint-Chinian converge, lies a collection of scattered but verdant vineyards presided over by the young and ambitious Olivia and Maxime Calas.

In 2016, at the cusp of their thirtieth birthdays, the dynamic duo embarked upon a venture committed to returning to the fundamentals of viticulture, valorizing the Languedoc terroir, and preserving the indigenous grape varietals through the production of distinct and original vintages. As native sons and daughters of the region, the Calas family self-identify as "epicurean winemakers" and carry out their oenological endeavors in an atmosphere of conviviality and candid camaraderie, always guided by an ethos of respect for both humanity and the natural world.

The vineyards under their purview are situated on various types of soil, including clay-limestone terraces and shale hillsides, thereby offering a diverse range of terroirs that serve to augment the breadth of the wines produced within the Saint-Chinian appellation.

Here is a very promising estate in Cessenon-sur-Orb, created in 2017 by Olivia and Maxime Calas, both in their 30s, who are from the village. After being trained by Marc Valette, Maxime had the opportunity to buy 8 hectares of vines, on the hamlet of La Bosque, a hard schist plateau, at 300 meters altitude. Pattes de Loup is the most important parcel (3 ha), surrounded by cistus, arbutus and oak trees, a small paradise for syrah and grenache. Ribeyrenc has recently been planted and promises to bring a juicy side to the wine.

dOMAINE la bosque "La RÉgalade" ROUGE

Drinking “à la régalade” consists of drinking without bringing the container to the mouth. This is the way our grandparents used to drink from a canteen, particularly during grape picking. This vintage is made from a blend of old vines grown on a shale terroir, in the heart of the scrubland. This vintage marks the return of a Languedoc grape, long neglected: Cinsault. Resistant to drought, it thrives in warm climates and is one of the oldest grape varieties in the South of France.

 

Appellation: Vin de France

Grape variety: 100% Cinsault

Terroir: 100% Clay-Limestone

Viticulture: Work in accordance with organic farming principles. Short pruning, manual harvesting Organic fertilization, superficial soil work, minimal use of phytosanitary inputs.

Vinification: Manual harvesting in crates. De-stemming/crushing Gentle fermentation. Light pumping over. Fermentation for 12 days. Minimal use of SO2.

Ageing: A few months in stainless steel tanks.

 

Notes: Easy to drink, you will enjoy the sweetness of fresh fruit flavors.

dOMAINE la bosque "PUR JUS"

This wine is a tribute to old Languedoc grape varieties grown on clay-limestone soils, located in the heart of the garrigue. Over time, these ancestral grape varieties have often been replaced by more standard varieties. The homogenization of tastes leads to the forgetting of certain ancient and traditional grape varieties. Here, we want to fight against this loss of heritage by reintroducing this originality, typicity and authenticity of the terroir into our glasses. Moreover, these grape varieties show better resistance to water stress and climate change. For us, more than a return to our roots, this vintage represents a new path to follow for the future.

 

Appellation: Vin de France

Grape varieties: 50% Cinsault, 40% Morrastel, 10% Carignan

Terroir: 100% Clay-Limestone

Viticulture: Work in accordance with organic farming principles. Short pruning, manual harvesting. Organic fertilization, superficial soil work, minimal use of phytosanitary inputs.

Vinification: Manual harvesting in crates. De-stemming/crushing Gentle fermentation. Light pumping over. Fermentation for 30 days. Minimal use of SO2.

Ageing: A few months in stainless steel tanks.

 

Notes: Easy to drink, Pure Juice will delight you with its delicacy of aromas.

dOMAINE la bosque "LaS BORIOS"

Las Borios - The alliance of terroirs! From the Occitan word "boria" which means the borie, small stone cabin located on the edge of the vineyards. It is the name of a tenure where clay-limestone and shale terroirs meet on the town of Pierrerue. This geological specificity offers this vintage all the advantages of a terroir's complexity.

 

Appellation: AOP Saint-Chinian

Grape varieties: 50% Carignan, 50% Mourvèdre

Terroir: 100% Schist

Viticulture: Work in accordance with organic farming principles. Short pruning, manual harvesting. Organic fertilization, superficial soil work, minimal use of phytosanitary inputs.

Vinification: Manual harvesting in crates. De-stemming/crushing Gentle fermentation. Light pumping over. Fermentation for 1 month. Minimal use of SO2.

Ageing: Aging in stainless steel tank until bottling.

 

Notes: The fruit of old Carignan and the finesse of Mourvèdre: this is this wine summarized in a few words.

dOMAINE la bosque "CAYENNE"

The Cayenne vintage is produced from a one-hectare parcel, composed of Grenache and Carignan. It is located at altitude on a shale terroir, surrounded by thick scrubland of holm oaks and arbousiers. The very stony soil, very steep slope and south/west facing exposure provide the grenache with an ideal place to express all the finesse that characterizes it on this type of terroir. The grenache brings a solar and gourmet side to the wine, while the Carignan brings fruit, freshness and good tannic structure.

 

Appellation: AOP Saint-Chinian

Grape varieties: 70% Grenache, 30% Carignan

Terroir: 100% Schist

Viticulture: Work in accordance with organic farming principles. Short pruning, manual harvesting. Organic fertilization, superficial soil work, minimal use of phytosanitary inputs.

Vinification: Manual harvesting in crates. De-stemming/crushing Gentle fermentation. Light pumping over. Fermentation for 1 month. Minimal use of SO2.

Ageing: Aging in stainless steel tanks for 12 months.

 

Notes: The Cayenne vintage boasts a rich, garnet hue that hints at the complexity to come. On the nose, it delights with expressive aromas of red fruits, cherry and blackcurrant, with a subtle smoky undertone. The palate is met with a round and fresh attack, as flavors of ripe fruit flood the senses. This gourmet wine is not only pleasing to the palate, but also boasts a well-balanced structure with fine, elegant tannins.

dOMAINE la bosque "PATTE DE LOUP"

The wolf, once present not so long ago in the hinterland of Saint-Chinian, gave its name to this parcel of land. Perched at over 300 meters of altitude, the vines surrounded by scrubland offer us a wine that is both concentrated and elegant. Here, you're more likely to encounter a hare or a wild boar, than one of our own kind.

Notes: Here, the syrah and grenache take on a unique expression, exuding elegance, freshness and power.
