Terroir: Hautes Côtes de Nuits

Chalky-clay soil with a subsoil dating from the Jurassic period (Oxfordian).

 

Surface: 2.02 hectares

Vinification: Grapes for this wine are hand-picked and 100% destemmed. Cold maceration occurs for 4-5 days prior to fermentation, which is conducted at a temperature below 32°C to preserve aromatic compounds. Solid matter that forms a cap is broken down and juice is pumped over daily to maximize color and concentration extraction.

 

Maturation: 5% in new oak and 10% in oak barrelsof 1 year and the other part, in a vat.

Notes: Aromas of red fruits when young evolving to candied fruits. The good tannin’s structure allows them to age nicely.

Terroir: Nuits-Saint-Georges - 'Les Allots' parcel.

Situated at the bottom of the slope, touching the Premiers Crus, the soil is made up of redalluvium sediment containing limestone pebbles that has slipped down from the top of the slope.

 

Surface: 0.83 hectares

Grape variety: Pinot Noir

Vines Age:  30 to 60 years

Pruning: Simple Guyot

Annual Production: av. 5000 bottles.

 

Vinification: The grapes for this wine are hand-picked and 100% de-stalked. Cold maceration takes place for 4-5 days before fermentation, which lasts for 15-18 days at a temperature below 32°C to preserve aromatic compounds. Daily breaking down of the crust and pumping over ensures good concentration and color in the wine."

 

Maturation: The wine is kept in 228 litres oakbarrels for 15 to 20 months. 30% of the barrels arenew oak. The wine is not filtered before bottling.

Notes: The Allots have good color. When young, these wines are often closed and reserved, but after 4-5 years of aging, their full qualities are revealed. The aroma is characterized by wild fruit mixed with floral notes. As the wine ages, it becomes finer, developing undergrowth and occasionally animal aromas.

Brown, calcareous, gravely top soil with a little clay over white oolite mixed with pieces of limestone that lie on compact, pink coloured limestone (Prémeaux) and stones.

Notes: This wine has a fresh, pure fruit character and an elegant structure with finesse reminiscent of wines from Vosne-Romanée. It is easy to drink when young, but has a surprising ability to develop and reveal its unique personality over time.

Terroir: Nuits-Saint-Georges 1er Cru - 'Les Bousselots' parcel

The name of this parcel refers to its uneven, bumpy ground. The soil consists of deep calcareous brown top soil overlying red-brown stony chalk dating from the Bathonian geologic stage

 

Surface: 0.55 hectares

Grape variety: Pinot Noir

Pruning: Simple Guyot

Annual Production: av. 3200 bottles.

 

Vinification: The grapes for this wine are hand-picked and 100% de-stemmed. Cold maceration occurs for 4-5 days prior to fermentation, which lasts for 15-18 days at a maximum temperature of 32°C to preserve aromatic compounds. Daily breaking down of the crust and pumping over ensures good concentration and color in the wine.

 

Maturation: The wine is kept in 228 litres oak barrels using 28% new oak for 15 to 20 months. The wine is not filtered before bottling.

 

Notes: The Bousselots have an intense color. When young, the aroma is characterized by red fruit. Fine balsamic and liquorice aromas develop with age. It has a full body and supple tannins, resulting in a pleasant, approachable wine.

The soil consists of deep brown pebbly calcareous soil with a reddish-brown color, due to erosion of rocks from the Bathonian geological stage.

 

Surface: 0.30 hectares

Annual Production: av. 2200 bottles.

 

Vinification: The grapes for this wine are hand-picked and 100% destemmed. Cold maceration occurs for 4-5 days prior to fermentation, which is conducted at a temperature below 32°C to preserve aromatic compounds. Solid matter that forms a cap is broken down and juice is pumped over daily to maximize color and concentration extraction.

Notes: This wine has a deep color and a wide range of aromas including small red berries, resin, liquorice, and fine spices. The wine has a firm structure and body with balanced fine tannins and flavors of black currant jam, candied cherries, and liquorice.

The soil consists of light red topsoil with a high proportion of white oolite over deep stony, calcareous subsoil. The subsoil is the result of erosion of rocks from the Bathonian geologic stage.

Annual Production: av. 1100 bottles.

 

Vinification: The grapes for this wine are hand-picked and undergo cold maceration for 4-5 days before fermentation begins. Fermentation and maceration last for 15-18 days in vats maintained at a temperature below 32°C to preserve aromatic compounds. Daily breaking up of the crust and pumping over ensures good concentration and color in the wine.

 

Maturation: The wine is aged in 228-liter oak barrels with 28% new oak. It is not fined or filtered prior to bottling

 

Notes: The wine has a powerful first impression with fine, elegant aromas of red fruits. It is long and harmonious in the mouth, with the concentration and complexity of a great wine.
